Bread Dough

The bread dough is a leavened preparation, a basic recipe that absolutely cannot be missing from your recipe book. It is a simple dough perfect for making fragrant loaves, delicious rolls, soft stuffed breads, focaccias, and pizzas or for any recipe that requires its use. The bread dough is a “convenient” recipe because it rises in one day. Take notes because it will surely be useful!

Ingredients

With these quantities, you get 800 grams (28 oz) of bread dough.

  • 3 cups all-purpose flour
  • 1 1/4 cups bread flour (or Manitoba)
  • 0.53 oz fresh yeast
  • 2 tsp salt
  • 1 tbsp extra virgin olive oil
  • 1 1/4 cups water

Steps

  • In the mixer bowl, pour 250 milliliters (1 cup + 2 tbsp) of water and dissolve the yeast. Add the flours and start mixing using the hook. When the dough begins to come together, add the extra virgin olive oil and then the salt. If necessary, add the reserved water. Continue working until you get a smooth and homogeneous dough. Transfer it onto a lightly floured work surface and knead it by hand for a few minutes then transfer it into a bowl, cover it and let it rise until it doubles: it will take about a couple of hours.

    After the rising time, use the dough as desired.

    To make bread: form the loaf in the desired shape and size. For example, you can use round or oval proofing baskets to shape it and let it rise until it doubles. After the resting time, transfer it to a baking sheet lined with parchment paper and use a bread knife to score the surface. Bake in a preheated oven at 428°F (220°C) for 40/50 minutes or until the bread is nicely golden.

    To make rolls: divide the dough into small portions of 60 grams (2 oz) and form balls. Place them on a baking sheet lined with parchment paper and let them rise until they double in size, then bake in a preheated oven at 356°F (180°C) for 25 minutes.

    The cooking times are indicative, but you should always refer to your oven and adjust accordingly.
