Amazing, indulgent, a basic dough to enjoy as is or to fill, to leave smooth or to decorate with melted chocolate and chopped nuts. And how do you prefer butter shortbread cookies? - 2 1/2 cups all-purpose flour
- 10 1/2 oz butter
- 3/4 cup powdered sugar
- 1 egg
- 1 lemon (zest)
- 1 teaspoon vanilla extract

Steps
The butter must be cold from the refrigerator and the egg at room temperature. The proportions for this dough are suitable for using a cookie stamp. Using a classic recipe or changing the proportions risks the design disappearing during baking.
In the bowl of a stand mixer with the paddle attachment, work all the ingredients until they are compact and well combined: flour, powdered sugar, butter cut into pieces, egg, lemon or vanilla.
Take the dough and work it on the work surface forming a slightly flattened rectangular log. Wrap it in plastic wrap and place it in the refrigerator for two hours.
After the resting time, bring the dough back to the lightly floured work surface and using 2-inch rings or a rolling pin with rings, roll out the dough. Stamp the design onto the dough using a wooden cookie stamp and then cut them with a wavy-edged cookie cutter or a fluted pastry wheel.
Place the cookies on a baking sheet lined with parchment paper and bake at 355°F static, preheated for 15 minutes.
