- 1/2 cup cold coffee
- 1/2 cup soft butter
- 2 tsp baking powder
- 1 tsp baking soda
- 2 eggs
- 1 pinch salt

Steps
In the bowl of a stand mixer or with an electric mixer, beat the soft butter with the sugar for about ten minutes until you get a soft mousse. Incorporate the eggs one at a time, then sift in the dry ingredients with a pinch of salt. Finally, add the cooled espresso coffee. Stir to carefully combine all the ingredients, then distribute the mixture into 12 muffin liners placed inside the muffin pan. Bake in a preheated oven at 350°F for 20/25 minutes. Remove from oven and let cool before serving.
