With these quantities, I made four fairly large croquettes: they are sufficient for two people as a main dish, but if you serve them as a single dish with a side, you will need to double the quantities.
If the mixture struggles to bind, you can add a small egg and some breadcrumbs to the mixture, but it’s generally not necessary.
