Cauliflower Medallions

The cauliflower medallions are delicious vegetarian burgers that are simple to prepare, a tasty alternative to serve cauliflower at the table. Great to serve as is with a salad on the side, but also perfect in the classic burger buns with delicious sauces and grilled vegetables. For my cauliflower medallions, I chose the lighter oven cooking method, but you can make small meatballs with the same mixture and fry them if you prefer.

Ingredients

  • 3 1/2 oz cauliflower (cooked)
  • 5 1/4 oz cannellini beans (canned)
  • 1 3/4 oz breadcrumbs
  • to taste salt
  • 3 tbsps extra virgin olive oil
  • 3 1/2 oz stale bread

Steps

  • In the mixer bowl, place the cooked cauliflower and drained cannellini beans from their liquid, then transfer the mixture to a bowl, add the soaked and squeezed stale bread, the breadcrumbs (50/70 grams depending on how wet the mixture is), season with salt, and mix well to combine the ingredients. With slightly moistened or oiled hands, form the burgers and pass them in the breadcrumbs. Arrange the burgers on a baking tray lined with the reusable mat or parchment paper, drizzle with the extra virgin olive oil, and bake in the oven at 356 °F for 20/25 minutes. You can turn them halfway through cooking, but very gently to avoid breaking them.
