Cauliflower Pizzaiola

Ingredients

  • 1 cauliflower
  • 3.5 oz breadcrumbs (approximately)
  • 1 cup tomato sauce
  • 5.3 oz pizza mozzarella
  • 2 tbsps extra virgin olive oil
  • to taste salt

Steps

  • Remove the outer leaves of the cauliflower, wash it under running water, dry it, and cut it into slices about half an inch thick. Brush the slices with extra virgin olive oil on both sides and coat them in breadcrumbs, pressing well to make the breadcrumbs stick. Place the cauliflower slices on a baking tray lined with the appropriate reusable mat or baking paper and bake at 356 °F in convection mode for 30 minutes. Meanwhile, season the tomato sauce with two tablespoons of oil and a pinch of salt according to your taste. When the cauliflower is ready, spread the tomato sauce over the slices, add grated or julienned pizza mozzarella, and bake again for five minutes. Serve the cauliflower pizzaiola piping hot.

Notes

If you like, you can flavor the breadcrumbs with parmesan, paprika, parsley, garlic powder, oregano.
