The cheesecake muffins are soft, creamy, and delicate little bites, light yet delicious. Perfect mini treats for the summer, fresh and easy to make. All you need is a bowl, and in a few minutes, the batter is ready. For cooking? I did an experiment. I tried the air fryer. But, of course, the cheesecake muffins can also go in the oven. However, not everyone likes to turn on the oven in the summer, and a fresh dessert to bake can seem almost like a contradiction. The air fryer is ideal in the summer. If you don’t have one, I recommend it. In certain situations, it is very convenient.

Ingredients

I make the vanilla extract at home, but you can also find it at the supermarket or online. You can substitute with vanilla powder.

  • 6.17 oz ricotta cheese
  • 5.29 oz Greek yogurt
  • 1 egg
  • 0.71 oz cornstarch
  • 0.71 oz sugar
  • 1 teaspoon vanilla extract
  • as needed berries

  • 1 Bowl
  • 1 Hand whisk
  • 1 GOURMETmaxx Air Fryer

Steps

  • Place all ingredients (except the berries) in a bowl and beat well with a whisk until smooth and well combined. Distribute the mixture into muffin cups (I used disposable ones lined with paper cups to make it easier to remove the muffins). Top with berries and cook in an air fryer at 356 °F for 15/20 minutes or in a preheated oven at 356 °F for 20 minutes.

Repeat after me: “the air fryer does not fry.” For frying, you need oil! I believe I was one of the first to purchase this appliance when it hit the market. Why? It is compact. It doesn’t need preheating. It cooks faster. In the summer, it’s perfect because it doesn’t produce excessive heat like an oven. Do I use it for everything? Almost. For me, it’s very convenient. There are just two of us, and sometimes it’s not profitable to turn on the oven for small portions. That’s why I bought it. I still do real frying in the pan. You need to be aware of this because if you buy it with the hope of light frying, you’ll be disappointed. The air fryer does not fry. It’s simply a fan oven. Everything you do in an air fryer can also be done in an oven. Would I buy it again? Certainly! For all the reasons I’ve listed. The best? Those with a stainless-steel interior. Better oven-type or basket-type? It depends on your needs. I have both and prefer the oven-type.
