Chicken, Radicchio, and Apple Salad

Chicken, Radicchio, and Apple Salad is a light, healthy, and appetizing main course, a tasty alternative to make roast chicken more flavorful. Simple, quick to prepare, perfect for a quick dinner, a great solution when you get home late or don’t feel like spending too much time in the kitchen but still want to serve something that is good and also visually appealing because we all know we eat with our eyes first. Let’s go to the kitchen and prepare this very easy chicken, radicchio, and apple salad.

Ingredients

  • 1 head radicchio (preferably Chioggia radicchio)
  • 2 boneless chicken thighs (I used thinly sliced chicken)
  • 1 Golden apple
  • 3 pickled gherkins
  • 1.75 oz walnut kernels
  • 3 tbsps extra virgin olive oil
  • to taste salt

  • 1 Grill Pan

Steps

For this preparation, I use thinly sliced chicken that I buy already portioned at the supermarket meat counter, but boneless chicken thighs are also fine.

  • Detach the radicchio leaves, wash them, and dry them using a salad spinner. Then chop it into small pieces. Slice the pickled gherkins into rounds. Slice the boneless chicken thighs and cook them on a lightly oiled grill pan until golden on both sides. It will take about fifteen minutes depending on the thickness of the meat. Alternatively, you can use an air fryer, setting it to 365°F for 15 minutes and turning the chicken halfway through cooking. Peel the apple, remove the core, and slice it into thin wedges. Arrange the ingredients on a serving plate, season with oil and salt, and finish with the roast chicken and walnut kernels.

Notes

Optionally, you can add fresh scamorza cheese cut into small cubes.
