The chocolate and cinnamon madeleines are delicious shell-shaped treats perfect for an afternoon snack with a good cup of tea or with hot chocolate. Small fragrant and indulgent bites will be a treat for your guests. For these chocolate and cinnamon madeleines I used a classic mold even though my favorite is this one because they produce slightly chubbier madeleines that I find even more indulgent!

Ingredients
- 7 tbsp soft butter
- 1 2/3 cups powdered sugar
- 4 eggs
- 1 3/4 cups all-purpose flour
- 1 oz unsweetened cocoa powder
- 3 oz melted dark chocolate
- 1/4 tsp ground cinnamon
- 1 packet baking powder

Steps
In the stand mixer bowl, beat the butter with the powdered sugar until light and fluffy. Add the eggs at room temperature, incorporating them one at a time and waiting until each egg is fully incorporated before adding the next. Sift the flour with the cocoa and the baking powder, then fold everything in by hand with a spatula into the whipped egg mixture. Also add the cinnamon and the melted, slightly cooled dark chocolate. Work the batter just long enough for the flour to be incorporated and divide it into the madeleine pan. Bake in a preheated oven at 329 °F for 20 minutes. Let the madeleines cool before serving.
