Ingredients

  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/3 cup rice oil (or another vegetable oil of your choice)

Steps

  • Preheat the oven to 375 °F and line a muffin tin with liners (if using liners like mine, they are rigid and stand on their own). In a bowl, mix the flour with the sugar, baking powder, and salt. Separately, beat the eggs with the milk, rice oil (or the chosen vegetable oil) then add them to the dry ingredients and mix. Pour the resulting mixture into the muffin cups.

    Prepare the filling by mixing sugar, cinnamon, and melted butter in a bowl. Pour a teaspoon of this mixture onto each muffin and use a skewer to swirl it into the batter.

    Bake the muffins in a preheated oven at 375 °F for twenty/twenty-five minutes. Remember to do the skewer test to check for doneness.

    While the muffins are baking, prepare the glaze by mixing powdered sugar with milk until smooth. Once the muffins are ready, let them cool for a few minutes, then move them to a rack and drizzle with the glaze.

  • Can they be frozen?

    Yes, but without the glaze, and they last in the freezer for up to three months. When thawing, you can warm them in the oven at 300 °F for 5-10 minutes and add the glaze before serving.

  • How long do they keep?

    At room temperature in an airtight container for 2 days. In the refrigerator for a week.
