Ingredients
- 3 eggs
- 1 cup sugar
- 1/2 cup rice oil (or another vegetable oil of your choice)
- 3/4 cup citrus juice (I used 3 small oranges and 1 red grapefruit)
- 2 oranges (grated zest)
- 2 1/2 cups all-purpose flour
- 1 packet baking powder

To bake the bundt cake, I used the Versilia oven without a lid. You can use the mold you prefer as long as you respect the measurements.

Steps
In the bowl of a stand mixer or using an electric mixer, beat the eggs with the sugar, add the flour, grated orange zest, and citrus juice. Then also add the rice oil or the vegetable oil of your choice and continue to mix. Finally, add the baking powder and mix it well into the batter. Pour it into a greased and floured 9-inch bundt pan and bake in a preheated oven at 356°F (180°C) for 40 minutes. Always remember to do the skewer test to check for doneness. Let the cake cool on a rack before slicing.
