Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/2 cup rice oil (or any other vegetable oil of your choice)
  • 3/4 cup citrus juice (I used 3 small oranges and 1 red grapefruit)
  • 2 oranges (grated zest)
  • 2 1/2 cups all-purpose flour
  • 1 packet baking powder

Tools

To bake the cake in the oven, I used the Versilia oven without the lid. You can use any mold you prefer, respecting the measurements.

Steps

  • In the bowl of a stand mixer or with an electric mixer, beat the eggs with the sugar, add the flour, grated orange zest, and citrus juice. Then, incorporate the rice or vegetable oil of your choice and continue mixing. Finally, add the baking powder and blend well into the batter. Pour it into a greased and floured 10-inch bundt pan and bake in a preheated oven at 350°F for 40 minutes. Remember to always do the skewer test to check if it’s done. Allow the cake to cool on a rack before slicing it.
