The citrus popsicles are ideal for a refreshing summer break. Made with 100% fruit juice, a syrup of water and sugar, and the sparkling juice of lime, they are very easy to make. Popsicles are always in my freezer in summer, ready for the sudden arrival of friends. And if you prepare the citrus popsicles using this fantastic mold (it’s similar to mine), they will also look very nice. Of course, you can also make them using a homemade contraption with sticks and plastic cups, but you buy the mold once and use it indefinitely.

Ingredients
- 1 1/3 cups 100% citrus juice
- 1 cup water
- 1/2 cup lime juice
- 1/2 cup sugar
Tools
- 1 20 cm Saucepan
- 1 Knife
- 1 Cutting Board
- 1 Manual Citrus Squeezer
- 1 Pitcher
- 1 Popsicle Mold
Steps
Pour the water and sugar into a small saucepan, place it on the stove, and heat for a few minutes or until the sugar is well dissolved. Then let it cool completely.
Cut the limes in half and squeeze the juice.
Pour the citrus juice and lime juice into a pitcher, add the cold syrup and mix.
Transfer everything into the popsicle molds. Insert the stick and place in the freezer for at least 3 hours.
Notes
To extract the popsicles, it may be necessary to run the mold under hot water. I usually take them all out when they’re ready. I wrap them in parchment paper and place them in a freezer bag in the freezer.
