Ingredients
- 6.3 oz mezze maniche (or short pasta of choice)
- 3.5 oz canned tuna
- 1/4 lemon (juice)
- 2.8 oz shelled pistachios
- 2 tablespoons 100% pistachio paste
- 2 tablespoons extra virgin olive oil
- 1/2 onion

Steps
Prepare the pistachio cream: place the pistachios in a mixer and chop them, then add a tablespoon of oil and continue blending. Finally add the lemon juice and blend again to obtain a cream.
In a low-sided saucepan, heat the oil and let the thinly sliced onion sauté, then add the tuna and season for a few minutes. Turn off the heat, add the prepared pistachio cream and the two tablespoons of 100% pure pistachio paste (you can find it online or at the supermarket). Mix well.
Boil the pasta in plenty of salted water for the time indicated on the package. Drain it and sauté it in the sauce, adding a couple of ladles of cooking water to blend. If desired, plate and add crushed pistachios to complete the dish.
