Ingredients

  • 1.4 cups water
  • 2 tsp dry yeast
  • 4 1/4 cups all-purpose flour
  • 2 tsp salt

Steps

  • In the bowl of the stand mixer, place the water and salt. Add the flour and dry yeast and knead until you get a soft yet smooth and homogeneous dough. Transfer it into a bowl, cover it, and place it in the refrigerator overnight (or about eight hours). The following morning, take the dough out of the refrigerator and let it acclimate at room temperature for an hour.

    Divide the dough into approximately 14 portions of 60 grams each, form balls, and let them rest covered with a cloth for twenty minutes. After the resting time, slightly flatten them into a disc and then shape them again into a ball. Place them in the perforated baking tray for rolls. Score each roll in the center with a bread cutter or knife, cover them, and let them rise for forty minutes.

    After the resting time, bake the crunchy rolls in the oven at 450 °F for 25 minutes with steam. If you have a steam oven, follow your instruction manual; otherwise, place a small pot with water at the bottom of the oven to maintain humidity during baking.
