- 3.5 tbsp rice oil (or other vegetable oil of choice or 1/4 cup melted butter)

Steps
In a bowl, weigh all dry ingredients: flour, sugar, cocoa, baking powder, and salt. Use a hand whisk to mix well. In a second bowl, whisk the liquid ingredients: oil or melted butter, milk, and eggs. Gradually add the dry mix to the liquid ingredients, mixing well until you get a smooth batter without lumps. Finally, add the chocolate chips and mix. Pour the batter into muffin liners placed inside a muffin pan to keep them stable, and bake in a preheated oven at 356 °F (180 °C) for 20/25 minutes. Baking time depends on the oven, so always do the skewer test before removing from the oven. When ready, let them cool on a wire rack, then core the center (I use the cupcake corer) and fill them with pistachio spread. If the spread is too dense, warm it a bit to make it easier to insert into the muffins.
