Ingredients

  • 1 cup + 2 tbsp g all-purpose flour
  • 1 cup g Manitoba flour
  • 3/4 cup g milk
  • 1 tbsp g cocoa powder
  • 1 tsp g fresh yeast
  • 3 tbsp g sugar
  • 1 tsp g salt
  • 1 1/2 tbsp g butter
  • 1 tsp orange paste
  • 1 1/2 oz g melted dark chocolate
  • 1 3/4 oz g chocolate chips

Steps

  • In the stand mixer bowl, insert the flour with the crumbled yeast, add the sugar and the milk, and start the machine. When the dough starts to come together, add the salt, melted chocolate, softened butter, and orange paste. Let the ingredients blend and work until a nice smooth dough forms, then add the chocolate chips and incorporate them into the dough. Transfer the dough to a bowl, cover it, and let it rise until doubled. It will take at least three hours or maybe more depending on the external temperature. After the resting time, transfer the dough to the work surface and divide it into 12 portions of 50 grams each. Form balls and place them on a baking sheet lined with parchment paper. Let the buns rise until doubled (about an hour) and bake in a preheated oven at 340°F for 15 minutes.
