Endive and apple salad is a simple, quick, and tasty side dish. If you love the slightly bitter taste of endive, this salad is for you. You can enjoy it as I propose or add some walnuts and a drizzle of honey if you like. To prepare the endive and apple salad, I chose the Gala variety, but Golden, Fuji, or Granny Smith apples work well too.

Ingredients
- 7 oz Belgian endive
- 1 Gala apple
- 2 carrots
- 2 tbsps extra virgin olive oil
- to taste apple cider vinegar
- to taste salt

Steps
Clean the endive by separating the leaves, wash, and dry them using the salad spinner. Cut into pieces and transfer to a bowl. Peel the carrots, trim the ends, and grate them using a coarse grater. Peel the apple and dice it. Gather the carrots and apple in the bowl with the endive. In a small bowl, mix the olive oil with apple cider vinegar and salt, and pour it over the salad. Mix well and serve.
