Flavored Zucchini

The flavored zucchini is a simple and tasty vegetarian side dish that can be prepared in a few minutes: a dish to create with ingredients that are always in the fridge. It takes very little to make a side dish inviting and appetizing, and flavored zucchini prepared this way will be perfect alongside a main course but can also make cold pasta even more delicious!

Ingredients

  • 1 1/2 cups zucchini
  • 1/4 cups breadcrumbs
  • 1/4 cups grated Parmesan cheese
  • 2 tbsps extra virgin olive oil
  • to taste garlic powder (or 1 clove of garlic)
  • to taste dried oregano
  • to taste salt

  • 1 Mandoline

Steps

  • Wash the zucchini, dry them, remove the ends and slice them into thin rounds with the mandoline, then cut the rounds into wedges (if you prefer, you can make cubes or leave them as rounds). In a pan, heat the oil, add the zucchini, and sauté for ten minutes, stirring very often. Season with garlic powder, oregano, and salt. Then add the Parmesan and breadcrumbs and continue cooking, always stirring, for five minutes. Serve the flavored zucchini piping hot.

Notes

You can replace garlic powder with a clove of fresh garlic: let it brown in the oil so that it releases its aroma, then remove it and add the zucchini.
