The focaccia muffins or focaccia muffin are soft, delightful bites perfect as an appetizer, finger food for party buffets, or for an aperitif evening with friends. Delicious stuffed or enjoyed plain, the focaccia muffins are also great for enriching the bread basket. Ingredients
- 2 3/4 cups all-purpose flour
- 1 cup water
- 1 tsp salt
- 2 tsp extra virgin olive oil
- 1 oz fresh yeast (or 1/2 oz dry yeast)

Steps
In the bowl of the stand mixer (but you can also knead by hand using a spoon) pour the flour with the crumbled fresh yeast, add the water little by little starting to mix. Add the salt and oil and work again to combine the ingredients. Let the dough rest for thirty minutes. After resting, perform a series of folds directly in the bowl by pulling the edges of the dough towards the center and let it rest for thirty minutes. Repeat the operation for a total of three times allowing thirty minutes of rest between each fold. After the folds, let the dough rise for three hours. Transfer the dough onto the work surface and divide it into twelve parts of about 50 grams each. Place them inside a well-oiled muffin pan and let rise covered for 1 hour. After resting, sprinkle the muffins with a drizzle of extra virgin olive oil, create dimples on the surface with your fingers and bake in a preheated oven at 430 °F for about 20 minutes.
