The fruit and fresh cheese salad is a fresh, summer dish, quick to enjoy for a light break. Whatever the season, there’s always a place on my table for salads, but in summer I like to create tasty mixes by combining fruits with vegetables and fresh cheeses (feta, fresh cheese, and cottage cheese are my favorites). This fruit and fresh cheese salad with avocado and peaches is delicious! Try it!

Ingredients
- 2 ripe and firm avocados
- 9 oz fresh cheese
- 2 nectarines
- 1/2 untreated lemon
- 3.5 tbsps extra virgin olive oil
- to taste oregano
- 1 tsp salt

Steps
Cut the fresh cheese into wedges. Wash the nectarines and slice them. Peel the avocado, remove the pit, and slice it. Arrange the plate with sliced avocado, nectarines, and fresh cheese wedges. In a small bowl, blend the olive oil with the juice of half a lemon, salt, oregano to taste, grated lemon zest, and pour the dressing over the salad. Serve immediately.
