The giant pancake fluffy, delicious, cut into slices and enjoyed with a scoop of Greek yogurt is delightful for breakfast. There is no sugar among the ingredients because the oat flour I chose is already sweetened, so if you use simple oat flour, remember to add a generous tablespoon of sugar. Try making the giant pancake yourself!

Ingredients

  • 1/2 cup oat flour (biscuit flavor)
  • 1/8 cup desiccated coconut
  • 3/4 oz coconut Greek yogurt
  • 5 oz egg whites
  • 1 tsp baking powder
  • as needed cocoa

  • 1 6-inch Pan

Steps

  • In a bowl, combine the oat flour (I used the biscuit flavor from Prozis), desiccated coconut, yogurt, egg whites, and baking powder. Mix with the whisk until smooth and lump-free. Brush the pan with a little oil and pour in the batter. Cover and cook until bubbles start to form on the surface and a crust begins to form on the sides, then flip it with the help of a plate and continue cooking on the other side. Flipping a giant pancake is not easy, so if you prefer, use the batter to make classic smaller pancakes. Sprinkle with cocoa and serve with a scoop of coconut Greek yogurt.

Notes
