The gnocchetti with fake carbonara is a simple and good dish, a quick recipe with a delicate flavor. Fake carbonara only because it recalls the colors and taste but without the egg. If you want the real carbonara, the proper recipe can be found in the article “Spaghetti alla carbonara“. However, I find it useful to have an alternative in case of allergies, intolerances, or if someone doesn’t like the presence of an egg. Therefore, note down this gnocchetti with fake carbonara as the recipe will surely come in handy.

Ingredients
- 1.1 lbs gnocchetti
- 5.3 oz bacon
- 6.3 oz cream cheese
- 1 packet saffron
- 0.5 cup hot water
- to taste grated Parmesan
Tools
- 1 Saucepan with low edges
- 1 Bowl
- 1 Spatula
- 1 Pot for boiling pasta
- 1 Spoon pasta strainer
Steps
In a low-edged saucepan without adding any seasoning, let the bacon brown. Once ready, set it aside on a plate with kitchen paper. Then return it to the pan. In a bowl, work the cream cheese with hot water, adding a little at a time (you might not need it all) until you get a smooth cream. If it’s too thick, add a little more water. Add the saffron, mixing well to color the cream cheese evenly. Boil the gnocchi in plenty of salted water, drain them as soon as they rise to the surface with the appropriate slotted spoon, and transfer them to the saucepan with the bacon. Add the cream cheese and gently mix the gnocchi. Serve with grated Parmesan on top.
