Homemade granola is a simple and healthy recipe perfect for a delicious and rich breakfast. Delicious because it is coconut-flavored, granola is great to enjoy in milk, plant-based drinks, or yogurt: a mix of ingredients that you can customize as you like. For example, I cannot add nuts to granola because I can’t eat them, but if you like them, you can add them. The prepared granola can be kept for a couple of weeks, but if vacuum-sealed, it lasts a couple of months. Crunchy and tasty, here is a base to start creating your ideal granola mix.

Ingredients

  • 1 cup rolled oats
  • 1/4 cup puffed spelt
  • 2 tbsps honey
  • 2 tbsps coconut oil
  • 1 pinch of salt
  • 1 and 1/2 tablespoons of water
  • 1 tsp vanilla extract

  • 1 Reusable parchment paper sheet

Steps

  • Weigh 1/2 cup of rolled oats, transfer them to the chopper and blend until you obtain a flour. Pour them into a bowl. Work the honey with 1 and 1/2 tablespoons of water and the salt, and pour it into the bowl. Mix so that the flour is moistened, then add the vanilla extract and coconut oil. If you prepare it in summer, the coconut oil will be liquid, while in the cold season, it becomes solid, so it needs to be heated and allowed to cool slightly before adding it to the mixture. Also, pour the remaining rolled oats and puffed spelt into the bowl, and mix everything well. Transfer the mixture onto a baking sheet lined with parchment paper and dry in a fan oven for 20/25 minutes at 329°F, gently turning halfway through cooking. Let the granola cool in the slightly open oven and store it in a glass container.
