Greek Yogurt Cookies

Ingredients

  • 1 egg
  • 120 g sugar
  • 150 g plain Greek yogurt
  • 1/4 cup rice oil (or another vegetable oil of choice)
  • 2 teaspoons vanilla extract (or vanillin)
  • 300 g flour
  • 8 g baking powder
  • 60 g chocolate chips

Steps

  • In a bowl, place the egg, Greek yogurt, sugar, vanilla, and oil. Mix with the fork until you obtain a cream. Then add the flour, baking powder, and chocolate chips. Knead with your hands until all the ingredients come together into a soft dough. With slightly moistened hands, form balls of about 1 oz to 1.1 oz and place them on a baking tray lined with parchment paper. Bake in a preheated oven at 355°F for 15-20 minutes. If desired, sprinkle with powdered sugar before serving.
