Ingredients

  • 2/3 cup Manitoba flour
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 3/4 tsp fresh yeast
  • 1 tsp salt (level)
  • 2/3 cup water

Steps


  • In the bowl of the stand mixer (but you can also knead by hand) add the water and salt. Stir to dissolve. Add the flours and crumbled fresh yeast. Start working and continue until you obtain a smooth, homogeneous, soft, and elastic dough. Transfer it to a bowl, cover it, and let it rise until doubled in size. It will take a couple of hours. After the resting time, weigh the dough and divide it into five equal balls, then roll them out with the rolling pin to a thickness of about 0.8 inches. Preheat the oven to 464 °F in ventilated mode with the baking tray inside to heat. When the oven reaches temperature, place the discs on the tray lined with parchment paper and bake for 10/15 minutes. The buns will be ready when they puff up and turn a beautiful golden color.
