The marinated chicken breast is a delicious second course: a marinade rich in aromatic herbs, flavors, and scents, with quick cooking on the grill (if you like the “grill lines” on the meat) or as I preferred to do in an air fryer. Cook it, transfer it to a dish immersed in the marinade, cover with plastic wrap, and let it rest. Nothing could be easier. You can enjoy it cold or warm. The marinated chicken breast is perfect during the summer season because it can be conveniently prepared in advance, kept in the fridge, and ready when you get home: just heat it for a few minutes, and dinner is already on the table!

- 6 slices chicken breast
- 6 tablespoons extra virgin olive oil
- 5 berries juniper
- 2 cloves garlic
- 2 sprigs rosemary
- 3 leaves basil
- 2 leaves sage
- as needed oregano

Steps
Place the chicken slices in the air fryer, spray them with a little oil, and cook at 365 °F for 10 minutes. If you prefer, you can grill them. While the meat is cooking, prepare the marinade: in a baking dish, add the oil, grated lemon zest, sage, basil, chopped garlic, crushed juniper berries, rosemary, oregano, and thyme. Once the meat is cooked, season with salt and transfer it to the baking dish. Cover with plastic wrap and let it rest at room temperature until serving. If you prepare it well in advance, say in the morning for the evening, or if it’s very hot, store it in the refrigerator and then gently warm it before serving.
