- 1.75 oz speck (in strips)
- 1/2 red onion
- 3.5 oz sandwich bread (about 6 slices)

Steps
In a bowl, soak the bread in water for a few minutes. Chop the onion. In a pan, heat a tablespoon of extra virgin olive oil, add the onion and speck, and let them stew over low heat, then let cool. In a bowl, transfer the ground beef, well-squeezed bread, egg, chopped herbs, nutmeg, salt, and the cooled onion with speck. Mix the ingredients to get a nice homogeneous mixture. Form meatballs weighing about 1.5 oz each. Place them on a baking sheet lined with parchment paper, add a drizzle of oil, and bake in a preheated oven at 350°F for thirty minutes or until the meatballs are well browned, turning them halfway through.
