With these amounts, I prepared three single servings using 4-inch square cocottes, but you can use a baking dish and make one large parmesan. If there are two of you but you have a big appetite, double the amounts. Similarly, if there are more people at the table, increase the quantities. I used a few shortcuts to speed up the process, but you can, for example, precook the eggplants also in the microwave at 600 w for three minutes after placing them on a plate without overlapping them, so you will likely have to cook them in several batches. You can bread and fry them or grill them. These steps will obviously make the preparation a little longer. I used pre-grated pizza mozzarella, but you can use classic mozzarella, which should be drained in a colander to lose some of its water. You can prepare the sauce yourself instead of using ready-made pulp, but the purpose of this recipe is to shorten the time.
