Olive muffins in the air fryer are tasty and flavorful bites, perfect for accompanying an appetizer of cheeses and cured meats or grilled vegetables. Making muffins in the air fryer isn’t easy because the “force” of the wind created inside moves the batter, which then takes strange paths. But by using sturdy paper muffin cups, the batter “climbs” the sides and stays a bit more stable. So when time is short or unexpected friends arrive, olive muffins in the air fryer can be prepared in no time, and if they’re not quite perfect, it’s okay. However, they’re delicious!

Ingredients
- 2 eggs
- 1 pinch salt
- 1 cup all-purpose flour
- 1/3 cup grated Parmesan cheese
- 1/4 cup olive oil (mild)
- 1/4 cup white wine
- 3.2 oz olives
- 1/4 cup pine nuts
- to taste mixed dried herbs
- 1 tsp baking powder for savory cakes
Tools
- 2 Bowls
- 1 Hand Whisk
- 8 Paper Muffin Cups
- 1 Air Fryer GOURMETmaxx
- 1 Small Pan
Steps
Toast the pine nuts in a small pan. Roughly chop the olives. Sift the flour with the baking powder for savory cakes and add the dried herbs: I use a Mediterranean mix but you can use your favorites: basil, parsley, oregano, thyme, or rosemary. In a bowl, work the eggs with a pinch of salt using a whisk. Then add the oil, wine, Parmesan, and olives, and mix well. Add the pine nuts and combine. Finally, add the flour with the baking powder and work the mixture to obtain a smooth, lump-free batter. Transfer the mixture into the muffin cups and cook in the air fryer at 338°F for fifteen minutes.
