This tart has several preparation stages. None of them are too difficult, but it might seem demanding because there are many steps. My advice is to prepare everything possible the day before: shortcrust pastry, hazelnut brittle, cream infusion, crystallized rosemary. The brittle can even be made up to 5 days in advance and stored at room temperature in an airtight container (not in the fridge as it will become “weepy”). The next day, all you have to do is prepare the chocolate mousse, assemble the cake, and bake it.

Don’t be discouraged by the many steps because taken individually they are simple.

You can make cookies with leftover shortcrust pastry or freeze it for later use.
