Oven-Baked Vegetables with Peanut Butter

Ingredients

  • 1.54 lbs carrots (orange, purple, and yellow)
  • 0.66 lbs fennel
  • 1 tbsp maple syrup
  • 1 tbsp peanut butter
  • 1 tbsp extra virgin olive oil
  • to taste thyme
  • to taste salt

Steps

  • Peel the carrots, cut them in half, and then slice them lengthwise. Wash the fennel and slice thinly. Season the vegetables with thyme and salt. In a bowl, mix the peanut butter with the maple syrup and olive oil. Toss the carrots with this mixture and transfer them to a baking tray. Bake the carrots at 356 °F (180 °C) for 20 minutes, then add the fennel, mix, cover with aluminum foil, and continue cooking for another 20 minutes. But before removing from the oven, check that the vegetables are cooked as each oven varies.
