Pasta and beans with bacon is a tasty, flavorful, warm first course, perfect for warming up on cold days. For my pasta and beans with bacon, I used the sweeter and more delicate bacon, but for a more intense and strong flavor, you can choose the smoked one. The beans? Whether they are zolfini or cannellini, fresh cooked at home or canned, pasta and beans with bacon will always be delicious!

Ingredients
- 1.5 cups cooked zolfini beans (or beans of choice)
- 1 sauté cube (or mix for sauté of celery, carrot, and onion)
- 7 oz mixed pasta
- 2 tablespoons tomato paste
- 1.75 oz sweet bacon
- 2 tablespoons extra virgin olive oil
- to taste salt
Tools
- 1 High-sided saucepan
- 1 Pot for boiling pasta
Steps
In a high-sided saucepan, heat the oil with the sauté cube (I always keep some ready in the freezer, but if you don’t have it, you can prepare a classic sauté with half an onion, half a stick of celery, and a small carrot), then add the beans and let them soak up the flavors. Also add the tomato paste, a glass of water, adjust the salt, and let cook for 20 minutes. Boil the pasta in plenty of salted water for the time indicated on the package, drain it, toss it in the sauce for a few minutes so it absorbs the flavors, and serve it hot.
