The pasta frittata in an air fryer is a rich, simple, and quick single dish, a great recipe for recycling leftovers from other meals, a tasty and delicious recycling idea. Generally, pasta frittata is made with spaghetti, but I had some cooked and seasoned penne, so I used those. Then, eggs, Parmesan, provola which made everything beautifully stringy, a crunchy crust, and the pasta frittata in an air fryer became delicious, inviting, and appetizing.

Ingredients
- 7 oz penne
- 1 1/4 cups tomato sauce
- 3 eggs
- 1/2 cups grated Parmesan cheese
- to taste extra virgin olive oil

Steps
Boil the pasta in plenty of salted water, drain it al dente, and season it with tomato sauce (I used some leftover simple sauce), then let it cool. In a bowl, beat the eggs with a pinch of salt and Parmesan cheese. Add the pasta. Cut the provola into cubes and add it to the pasta, mixing everything well. Pour the pasta into a slightly greased baking dish, sprinkle with a bit of grated Parmesan, and cook in the air fryer preheated to 356°F for ten minutes, then raise the temperature to 392°F and cook for another ten minutes. Serve the pasta after letting it rest for ten minutes.
