Ingredients
- 2 tablespoons pistachio pesto (generous)
- 6.3 oz pistachio rigatoni (or other short pasta of choice)
- 1.8 oz smoked bacon
- 1/2 red onion
- 1 tablespoon extra virgin olive oil
- to taste salt
- to taste pistachio granules

Steps
Boil the pasta in plenty of salted water. Meanwhile, prepare the sauce. Peel and chop the onion, and let it soften in a low casserole with the extra virgin olive oil. Add the diced smoked bacon and let it brown for a few minutes. Then add the pistachio pesto. If necessary, thin with a couple of tablespoons of pasta cooking water. When the pasta is ready, drain it al dente and transfer it to the casserole with the sauce. If desired, stir in some grated Parmesan cheese (we preferred to enjoy it without to fully savor the full flavor of the pistachio pesto), complete with pistachio granules, and serve immediately.
