Ingredients
- 11 oz fusilli
- 5 oz smoked bacon
- 1 lb cherry tomatoes
- 1/2 cup blanched almonds
- 1 oz parmesan cheese (or Pecorino Romano)
- 1 clove garlic
- 6 leaves fresh basil
- 2 tbsps extra virgin olive oil

Steps
Wash the cherry tomatoes, remove the skin, cut them in half, remove the seeds and place them in the mixer. Add the almonds, basil, a pinch of salt, the peeled garlic clove, and blend to obtain a coarse cream. Transfer the red pesto to a bowl, add the parmesan or if you prefer Pecorino Romano cheese and the oil. Mix well to combine everything. In a small frying pan, fry the smoked bacon without adding oil, then add it to the pesto. Boil the pasta in plenty of salted water, drain it, keeping aside some cooking water, and then dress it with the red pesto. If necessary, add a little cooking water to better combine the cream with the pasta. Serve the pasta immediately.
