The night before, place four generous teaspoons of pistachio cream on a sheet of parchment paper and freeze them. In the mixer bowl or with electric beaters, beat the egg with the sugar until you get a nice fluffy mixture. Add the rice oil or other vegetable oil of choice, and the milk, pouring it slowly. Gradually add the flour, the pinch of salt, the vanilla extract, and continue mixing to combine all ingredients into a smooth, lump-free mixture. Finally, incorporate the baking powder. Pour a portion of the mixture into the muffin cases to create a base. Insert a frozen teaspoon of pistachio cream in the center and cover with the remaining batter. Bake in a preheated oven at 340°F (170°C) for 15-20 minutes. Check the doneness with a skewer before removing the muffins from the oven. Let them cool slightly, then spread a bit of pistachio cream on top and decorate with chopped pistachios.
