Pork Chops with Couscous

Pork chops with couscous with vegetables: a rich and flavorful one-dish meal for a simple yet tasty dinner. Breaded pork loin cooked in an air fryer or oven (or fried if you prefer, but I prefer lighter cooking methods), vegetable couscous that is ready quickly if you use the pre-cooked semolina, and dinner is served in no time. Perfect for those “low cost, maximum results” moments, pork chops with couscous are ideal when you’re in a hurry!

Ingredients

  • 4 slices pork loin (150 grams each)
  • as needed flour
  • 2 eggs
  • 7 oz breadcrumbs
  • as needed extra virgin olive oil
  • as needed salt

Steps

  • For the preparation of couscous, you can follow the instructions on the package and then add the vegetables you prefer or those you already have cooked in the fridge, for example. Alternatively, you can check out my summer vegetable couscous recipe.

    Slightly pound the pork loin slices, season them with salt on both sides and coat them in flour. Shake off the excess flour, then dip them in the egg ensuring they are well covered, then coat them with breadcrumbs, pressing them well. Place them in the air fryer basket with the appropriate perforated parchment paper and spray them with extra virgin olive oil. Cook them at 365 °F for 10/12 minutes.

    Serve them hot with vegetable couscous.
