Steps
Clean the savoy cabbage. Proceed with cooking the cabbage following the instructions in the article “Fuje strascinite“: when I prepare the cabbage in the pan, I follow the family recipe, my grandmother made it this way, in the Abruzzese style, my mother makes it this way, and naturally, I do too.
Cook the stew: cut the meat into small pieces (even if I buy it already as stew meat from the butcher, I cut it into smaller pieces at home). Pour the soffritto mix into a low-edges casserole, add the oil, and let it flavor for a minute, then add the meat pieces and brown them well on all sides. Deglaze with white wine and cook on low heat until the meat is tender: it will take about thirty minutes. If necessary, add hot water from time to time to continue cooking. When the stew is almost cooked, add the cooked cabbage and let the flavors blend for a few minutes. Adjust the salt and serve the stew hot.
