Potato, Green Bean, and Bacon Frittata

The potato, green bean, and bacon frittata is a simple and delicious second course. When you don’t know what to prepare, or when you have ingredients in the fridge that you absolutely need to use, a frittata is always a perfect solution. The potato, green bean, and bacon frittata is good hot, it’s good warm, and it’s good cold, so whatever the occasion, it will always be the right choice.

Ingredients

  • 6 eggs
  • 3.5 oz green beans
  • 7 oz potatoes
  • 5 slices rolled bacon
  • to taste salt

Tools

  • 1 Potato Peeler
  • 1 Mandoline
  • 1 Microwave Steamer
  • 1 Microwave
  • 1 10-inch Baking Dish

Steps

  • Peel the potatoes, slice them thinly using a mandoline, and steam cook them (I microwave them in a steam container at 900 W for 12 minutes).

    Trim the green beans, wash them, cut them into pieces, and boil them in salted water for 5/8 minutes.

    In a bowl, beat the eggs with a whisk, season with salt, add the green beans and potatoes, and mix. Transfer the mixture into a 10-inch baking dish or tart pan (if not non-stick, use parchment paper), top with rolled bacon, and bake in the oven at 356°F for about 25 minutes.
