The quick mini pizzas without rising, ready in a few minutes, topped and baked are perfect for an appetizer or a sudden craving for pizza. Great also for a snack because they take very little time to make! For my quick mini pizzas, I chose less refined flour, tomatoes, Taggiasca olives, and rice mozzarella, but you can make them as you prefer: the process and result don’t change. Ingredients
With these amounts, you can make a 9.5-inch pizza or eight small mini pizzas, sufficient for two people if served as an appetizer.
- 1 1/2 cups type 2 flour (or all-purpose flour)
- 7/16 cup water
- 2 tbsps extra virgin olive oil
- 1 tbsp instant yeast for savory recipes
- 1 pinch salt
- as needed tomato pulp
- 1 tbsp extra virgin olive oil
- as needed salt
- as needed oregano
- 8 Taggiasca olives
- as needed rice mozzarella (or fresh mozzarella)

Steps
In a bowl, mix the flour with the yeast, salt, water, and oil using a fork, then move the dough onto the work surface and continue kneading by hand until it is smooth, homogeneous but soft and slightly sticky. Return the dough to the bowl, cover it, and let it rest at room temperature for 15 minutes.
While the dough rests, season the tomato pulp (4-5 tablespoons should be enough) with oil, salt, and oregano.
After resting, divide the dough into eight small portions and slightly flatten them with your hands or a rolling pin, trying to give them a circular shape. Place the mini pizzas on a baking tray lined with parchment paper, top them with tomato sauce, olives, rice mozzarella, and bake them in an air fryer at 356°F for 20 minutes.
Notes
Rice mozzarella doesn’t melt as easily as classic mozzarella. I had it at home and wanted to use it. If you prefer, you can substitute it with a pre-grated plant-based cheese that melts better or with classic fresh mozzarella.
