If you are not experienced with high hydration doughs, reduce the amount of water to 12 oz: the dough will be easier to handle. You’ll have lower hydration but an equally excellent result. Once you’re comfortable with high hydration doughs, you can move to the next level.
For the double cooking method, you can use the pan or pot you prefer as long as it has a thick and heavy base similar to the one you see HERE. A cheaper alternative is fine as long as it is not a lightweight pan.
