Salad with Melon and Cottage Cheese

Salad with melon and cottage cheese, arugula, raspberries, and cucumbers is a fresh, slightly sweet and sour dish perfect for a quick lunch or a summer dinner. The salad with melon and cottage cheese is light, tasty, and flavorful, quick to prepare, and can be personalized as desired. If you like stronger flavors, you might replace the cottage cheese with feta, you can add cherry tomatoes or, for a non-vegetarian version, prosciutto or bresaola.

Ingredients

  • 5.3 oz cottage cheese
  • 5.3 oz arugula
  • 1/2 melon
  • 1 cucumber
  • 4.4 oz raspberries
  • 1 tbsp Tuscan Taste onion tears
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • 1/2 lemon (juice)

Tools

  • 1 Salad Spinner for salad
  • 1 Salad Bowl

Steps

  • Wash the arugula, dry it in the salad spinner, and place it in a salad bowl. Dress it with oil and salt. Clean the melon and cut it first into slices and then into cubes. Season it with a pinch of salt and a few drops of lemon juice. Peel the cucumber and slice it thinly with a mandolin, then add it to the arugula. Also, add the melon cubes, raspberries, and cottage cheese, distributing them with a fork. Adjust the salt, add a little more oil, and finish with Tuscan Taste onion tears. Gently mix and serve.
