Ingredients
- 4/5 cup sugar
- 1/4 cup butter
- 3/8 cup heavy cream
- 1 tsp salt

Steps
Pour the sugar into a small saucepan (preferably with a thick bottom) and heat it over medium heat without ever stirring it. If necessary, you can rotate the saucepan. It is very important that the sugar does not darken too much: if it happens, it means it is burnt. When the sugar is melted and has a nice golden color, stir with a spiral whisk and immediately turn off the heat. Immediately add the cold butter without stopping stirring and meanwhile heat the cream without bringing it to a boil. When the butter is melted, add the cream as well, stirring quickly. The salted caramel is ready. It can be stored in a sterilized jar for six days in the refrigerator. If it hardens, it can be heated in the microwave for a few minutes.
Notes
To taste, you can flavor with two tablespoons of rum or brandy.
