Savory Donuts

The savory donuts are a fridge and pantry-clearing recipe, one of those ideas that just comes up a bit by chance. For the series “open the fridge and cook”. Very simple to prepare, they are a great all-in-one dish to accompany with a nice mixed salad. For my savory donuts I used tuna, olives, grated zucchini, and a few other ingredients. A cute mold and they are ready to enjoy!

  • 2 zucchini
  • 4 teaspoons extra virgin olive oil
  • 3/4 cup type 1 flour (or flour of choice)
  • 2 teaspoons grated Parmesan cheese
  • 1 pinch salt
  • to taste chopped parsley
  • 1/3 cup black olives
  • 3 oz canned tuna in oil
  • 2 teaspoons baking powder for savory pies

Tools

  • 1 Cutting board
  • 1 Kitchen Knife
  • 1 Coarse Grater
  • 1 Bowl
  • 1 Hand Whisk
  • 4 Donut molds 4-5 inches

Steps

  • Wash the zucchini, remove the ends, and grate them using a coarse grater. In a bowl, beat the eggs with the oil, then add the flour, Parmesan, and salt and mix with a whisk. Add the chopped parsley, finely chopped olives, drained tuna from its oil, and grated zucchini. Mix all the ingredients well and finally add the baking powder for savory pies. Mix. Butter and flour four molds with a diameter of 4-5 inches (or you can use the release spray which is very convenient especially if you use decorated molds like I did) and distribute the prepared mixture inside. Bake the donuts in a preheated oven at 350°F for 20 minutes. Once ready, remove from the oven and mold then let them cool for a few minutes and serve.
