It’s perfect for dinner as a main dish or to take away for an outdoor lunch. Can it be made in the oven? Certainly, but I wanted to test my new air fryer with dual heating elements. The result? Good, but it can be improved a bit. Meanwhile, try it, because this savory pie in the air fryer will surely solve a meal for you!

Ingredients
- 1 roll puff pastry (rectangular)
- 2 zucchini
- 2 eggs
- 2.5 oz mozzarella
- to taste parsley
- to taste salt
- oz grated parmesan
Tools
- 1 Bowl
- 1 Hand Whisk
- 1 Cutting Board
- 1 Knife
- 1 Grater large holes
- 2 7-inch Tart Molds
- 1 Air Fryer Cosori 12 Liter Dual Resistance
Steps
Wash the zucchini, dry them, remove the ends, and grate them with a large-holed grater, then collect them in a bowl. Cut the mozzarella into cubes. Beat two eggs. Add the eggs to the zucchini, add the grated parmesan, parsley, and mozzarella. Adjust with salt and mix to combine all the ingredients. Cut the puff pastry to get two circles larger than the molds. Line the molds with the puff pastry and divide the filling between the two pies. Fold the pastry edges inside and cook each savory pie in a preheated air fryer at 338°F for 15 minutes, then turn it over and let the base brown for another five minutes. You can serve the savory pie either hot or warm.
Notes
My oven-like air fryer has dual resistance, but despite this, to brown the base well, I had to turn it: once the filling is dry, help yourself with a plate to flip it inside the mold and bake again to finish cooking.
If you prepare the pie in the oven, you can use a 10-inch mold and a round puff pastry. For cooking: 356°F for 20/25 minutes.
