The savory pie with mixed broccoli is a rich and tasty rustic dish to serve as an appetizer, on the buffet table, or with an aperitif. It’s perfect for a family dinner, a picnic, or a lunch at the office. It’s ideal on various occasions because it’s great enjoyed hot but delicious even cold. For the filling, I used mixed broccoli (I had broccoli, Romanesco broccoli, and cauliflower in the fridge), ricotta, and added sausage for more zest, but it’s optional; you can keep it vegetarian, two rolls of puff pastry, and it’s ready to bake. Ingredients
- 17.6 oz vegetables (I used mixed broccoli florets)
- 1 cup ricotta
- 7 oz sausage
- 3 eggs
- 2 sheets puff pastry
- 1/4 cup grated parmesan cheese
- to taste salt

Steps
Wash the broccoli florets and boil them in water for about 8 minutes or until the stems are soft. Drain and set aside. Remove the casing from the sausage, cut it into pieces, and brown it in a small pan without adding any seasoning. When the sausage is well browned, add the broccoli and let it flavor for a few minutes, then turn off the heat. Let it cool.
In a bowl, beat two eggs, add the ricotta, parmesan cheese, a pinch of salt, and the broccoli with sausage. Mix gently.
Unroll the puff pastry and place it with its parchment paper inside a 10-inch mold. Prick it with a fork, then transfer the prepared filling. Cover everything with the second sheet of puff pastry, seal the edges well, prick the surface with a fork, and brush with a little oil or, if you prefer, with a beaten egg. Bake in an oven at 350°F for about 35 minutes. When the savory pie is golden, remove it from the oven, let it rest for ten minutes, and then serve.
Notes
If you can’t find just the mixed broccoli florets and purchase whole broccoli, you’ll need to clean them: remove the outer leaves if any, detach the florets from the stalk and rinse them well under running water.
