- 4 oz pumpkin puree
- 3/4 cup flour
- 1 egg (small)
- 1/4 cup water
- 1 tsp baking powder for savory cakes
- 1/2 cup Asiago cheese (grated)
- to taste salt
- to taste mixed mushrooms (in oil)

Steps
Transfer the pumpkin pulp into a bowl and mash it with a fork. Add the egg and mix to combine the ingredients. Gradually add the flour mixed with the baking powder, alternating with the water, and stir with a whisk to avoid lumps. Adjust the salt and then add the grated Asiago. Transfer the batter into the waffle mold (or if you have it, you can use the electric griddle) and bake in a preheated oven at 355°F for fifteen/twenty minutes. Once the waffles are ready, let them cool slightly, then garnish with mixed mushrooms in oil and serve.
