Ingredients
Depending on the size of the fillets, two might be enough. Mine were small.
- 4 fillets sea bream
- 6 walnut halves
- 1.06 oz white onion
- 1 tbsp white vinegar
- 1 lemon
- as needed flour
- 6 leaves fresh basil
- as needed parsley
- 3 fresh mint leaves
- 1 clove garlic
- 1 tbsp extra virgin olive oil
- as needed salt

Steps
Peel the onion and slice it thinly, season it with salt, a tablespoon of white vinegar, a tablespoon of oil, and let it cook in a shallow casserole over low heat until it softens. Check that the sea bream fillets have no bones and remove them with tweezers if necessary, then salt, flour, and let them cook for a few minutes in a casserole with the onion, skin side up. Add two slices of lemon for aroma and cook for a couple more minutes with a lid. Chop the aromatic herbs with garlic and walnut halves. Uncover the pan, turn the fish fillets, deglaze with the juice of half a lemon or white wine if you prefer, and allow to evaporate. Add the herb and walnut mix and cook for a minute. Remove from heat, cover with a lid, and let rest for a couple of minutes before serving.
