Ingredients
- 4 eggs
- 1 1/4 cups sugar
- 2 1/2 cups flour
- 2/3 cup rice oil (or another vegetable oil of choice)
- 1/2 cup milk
- 1 organic orange (zest grated)
- 1 organic lemon (zest grated)
- 1 tsp vanilla extract
- 1 packet baking powder

Steps
Butter and flour the pan or if you prefer you can use release spray. In my case, I skip this step because my pan is perfectly non-stick and doesn’t need it. Preheat the oven to 350 °F. In the bowl of the stand mixer, food processor (or a bowl), add all the dry ingredients and mix to combine. Add the orange and lemon zests and vanilla. Then add the eggs, oil, and milk. Mix the batter until well combined and transfer it to the pan. Bake for 40/45 minutes. Check for doneness with the skewer test before removing the cake from the oven. When it’s ready, let it cool on a rack before slicing.
