The smoked flatbread is a fake yeast-free pizza that is prepared in a few minutes, rolled out thin and immediately baked: crunchy, appetizing and tasty, it is perfect for an aperitif, a snack, a quick lunch, to satisfy a pizza craving when time is short. For the smoked flatbread I chose speck strips, smoked scamorza, lard, and mozzarella. Oh yes! I would say it is quite a rich preparation! Try it because it is really tasty!

- 1 cup all-purpose flour
- 1/4 cup water
- 1/2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 7 oz tomato pulp
- 2 tbsps extra virgin olive oil

- 1.75 oz smoked scamorza cheese
- 1.75 oz mozzarella for pizza
- 2.5 oz speck strips
- 4 slices lard
- to taste semolina flour

Steps
In the stand mixer bowl, or you can knead by hand, combine the flour, water, extra virgin olive oil, and salt. Knead for seven minutes until you get a nice smooth and homogeneous dough. Wrap it in plastic wrap and let it rest at room temperature for fifteen minutes.
Cut the mozzarella into thin strips and the scamorza into cubes. In a bowl, season the tomato with oil and salt.
Divide the dough into two equal parts. Dust the work surface with semolina flour and roll out each dough ball into a thin sheet using the rolling pin. Transfer the sheet onto a baking tray lined with parchment paper, season with a thin layer of tomato, add speck strips, smoked scamorza, mozzarella, and lard. Bake in a preheated oven at 410°F for 12 minutes.
